Blackberry BBQ Tuna
Red Lobster Recipe
4 ( 6 oz.) tuna fillets
¼ cup olive oil
½ cup blackberry BBQ sauce
sea salt, to taste
black pepper, to taste
1 tablespoon pickled ginger
Blackberry BBQ Sauce
2 cup BBQ sauce (favorite preferably plain, not flavored)
½ cup blackberry preserves (jelly or jam)
½ cup sweet Thai chili sauce
¼ cup soy sauce
¼ cup water
Blackberry BBQ Sauce: Combine BBQ, chili sauce, water, and soy sauce in heavy sauce pot over medium heat. Bring to a simmer, stirring constantly with a wire whisk. Add blackberry preserves, and continue to stir until they are completely incorporated into sauce. Place sauce in container and store covered in refrigerator.
Remove sauce from refrigerator and allow to come to room temperature before serving.
Wood-Grilled Tuna: Lightly coat the tuna with olive oil, and season with salt and pepper. Place tuna over hot wood grill, and cook approximately 2-3 minutes. Turn tuna ½ turn to form crossed grill markings. Cook another 2-3 minutes. Flip tuna on grill, and repeat above procedure. Place tuna on plate and drizzle with BBQ sauce. Garnish tuna with pickled ginger.
Notes: Do not use tomato-based version sold near ketchup for the Thai chili sauce. This is located in the Asian section of your grocery store.
