Red Lobster is an American casual dining restaurant chain that is owned and operated by Darden Restaurants, Inc., headquartered in Orlando, Florida. The company also has operations in Canada, the United Arab Emirates, and Japan. As of May 29, 2011, there are 698 Red Lobster locations worldwide.
Red Lobster was founded in 1968 by entrepreneurs Bill Darden and Charley Woodsby. Originally billed as a "Harbor for Seafood Lovers", the first restaurant in Lakeland, Florida, was followed by several others throughout the southeast. In 1970, General Mills acquired Red Lobster as a five-unit company. With new backing, the chain expanded rapidly in the 1980s.
Lobster Crusted Tilapia
Red Lobster Lobster Crusted Tilapia
4 (4.5 ounce) tilapia fillets
8 ounce package spinach and artichoke dip
1 cup cooked lobster meat, chopped
1/2 cup Parmesan cheese
1/2 cup panko bread crumbs
2 tablespoons melted butter
Preheat oven to 425. Spray a large baking dish with nonstick cooking spray. Place Tilapia in a baking dish in a single layer. Drizzle with butter and season with salt an pepper. Combine dip and lobster meat in a small bowl. Mix well. Place an equal amount of the mixture on each fillet. Smooth to form an even crust.
In a separate bowl, combine the parmesan cheese and panko bread crumbs. Sprinkle the mixture all over the coated fish. Pour 1/4 cup of water around the fish being careful not to wash away the coating. Bake for 15-20 minutes until fish flakes easily.
