Red Lobster is an American casual dining restaurant chain that is owned and operated by Darden Restaurants, Inc., headquartered in Orlando, Florida. The company also has operations in Canada, the United Arab Emirates, and Japan. As of May 29, 2011, there are 698 Red Lobster locations worldwide.

Red Lobster was founded in 1968 by entrepreneurs Bill Darden and Charley Woodsby. Originally billed as a "Harbor for Seafood Lovers", the first restaurant in Lakeland, Florida, was followed by several others throughout the southeast. In 1970, General Mills acquired Red Lobster as a five-unit company. With new backing, the chain expanded rapidly in the 1980s.

Seafood Stuffed Sole


Red Lobster Seafood Stuffed Sole
Copycat Recipes

Serves 4

4 sole flounder fillets
1 cup bread crumbs
1 cup canned crabmeat, drained
1 small onion, finely chopped
1 egg, lightly beaten
3 tablespoons butter
1 tablespoons flour
1/2 cup chicken broth
grated parmesan cheese



Preheat oven to 350 degrees. In a bowl, combine crab, bread crumbs, onion, egg, salt and cayenne. Spoon onto fillets. Roll up and secure with a tooth pick. Place in a greased baking dish. Drizzle with butter.Bake uncovered for 25 - 30 minutes. Meanwhile, for the sauce, place remaining butter in a saucepan.
Stir in flour until smooth. Gradually add broth and bring to a boil. Cook and stir for 2 minutes until thickened and bubbly. Drain liquid from baking dish. Spoon sauce over fillets. Sprinkle with cheese. Turn oven to broil and melt the cheese.

NOTE:  Any thin white fish will work with this dish.
